Chef Lance Dillard’s tasting menu is a testament to his artistry and reverence for Japanese cuisine. Designed to be savored with chopsticks, each dish embodies elegance and sophistication. Embark on a culinary journey guided by Chef Dillard, whose passion for Japanese cuisine ignited at a young age. Lance’s culinary odyssey commenced in 1979, when he was merely 8 years old, frequenting Samurai in Solana Beach with his family. Those evenings immersed in sushi and Japanese delicacies sowed the seeds of a lifelong devotion to the art of Japanese cooking.
Under the tutelage of esteemed mentors like Masayuki Murata, Lance honed his skills, eventually ascending to the role of Executive Chef at Hokusei in Portland, Oregon. His culinary prowess further flourished during his tenure with the prestigious Mina Group, where he worked closely with culinary luminaries such as Chef Michael Mina. Lance also contributed his expertise to the renowned Michelin-starred establishment, Madcap, under the guidance of Chef Ron Siegel.
With an illustrious career spanning over 34 years, Lance draws inspiration from the world around him, finding beauty in the rhythms of nature, the stroke of a brush on canvas, and the ever-changing seasons. Marin County, with its breathtaking coastline, fertile farmlands, and majestic mountains, serves as a constant muse, infusing his creations with a profound connection to the land and sea.

I lived in Japan for many years and still travel there regularly. The carefully curated dishes were from well known Japanese favourites and rather than “fusion” they were well thought out interpretations using local ingredients. The ginko nut of the chawan mushi ( savoury egg custard) was a California almond. The yakisakana ( grilled fish) was paired with perfectly cooked baby carrots and local courgettes. Every dish was an experience - invoking both memories of my beloved Japan and introducing something new and local. I can’t say enough about Yo and Lance and their hospitality as well. This intimate venue offers a private 10-course prix fixe dinner, masterfully curated by Chef Lance Dillard. Our group of six was thoroughly impressed, both in terms of taste and presentation. Each dish showcased creativity and featured local, sustainable ingredients. The flavors are truly indescribable. Excellent eggs and great service. I ordered one ounce of Caviar Queens Reserve White Sturgeon and one ounce of salmon roe as a birthday gift to my husband. Unfortunately, terrible storms through the midwest delayed shipment and I did not receive the caviar until after my husband's birthday and it was in transit longer than predicted. We still consumed it but, IMO, the quality was compromised. It wasn't terrible but the texture was off, no pop and just not fresh tasting. The one ounce of white sturgeon cost $105 and the total order with $38 shipping included was $155. At that price, I want the caviar to be at peak quality, fresh. I contacted the company and said I understood they don't control the weather, but I don't either and at the price, the company should be responsible. And, they were. My order was replaced. Pre-COVID review. I first heard about this place during my attendance at Quail A Motorsports Gathering. The Caviar here is by far the best I've had in America. And I will go on to explain why. And why I gave this place 5 stars as well. Moving on. I've posted a picture of the menu here so you can get an idea of what they offer. And what I'll be talking about. Firstly this place is by reservation ONLY. They do not open till 4pm. Upon walking in I was greeted immediately. I was then asked to verify my reservation. Once verified I was able to sit down. The first thing I noticed right away is that the place is smaller. But in a good way. This place would be far to crowded and loud which would diminish the experience here. The decor here is very upscale, clean and new. The atmosphere is very rich and elegant. Whats there to expect? this is a caviar bar lol. Although I ordered the domestic flight. I have tried ALL the caviar they do offer here. I will list some of my favorites. Trout bacon infused ROE ( not so much caviar. It's definitely a roe ) Is a fun and tasteful roe. Yes it's the most basic it gets. But the flavor is there and you cannot go wrong with it. Next my favorite is the hackleback. One nice thing to know is that this one is in house. They use a local farm. With just the right amount of aging into this one it goes a LONG way for smooth flavor. Another to try is the Siberian sturgeon. Just WOW. It is absolutely amazing. Just be aware if you don't like rich flavor this wouldn't be the one for you. They also have small plates with Wagyu beef and Lobster etc. I would highly recommend the Wagyu. It's cooked absolutely perfect. With all that said I will finish it off with this. The display of what you ordered is on POINT. 5 star display! This place will definitely satisfy your caviar crave. And leave you with a smile on your face and a soul filled with happiness. This is truly a great experience and I'm so happy they've opened up a front caviar bar. I will definitely be returning!
