Chef Lance Dillard‘s 10-course menu is a testament to his artistry and reverence for Japanese cuisine. Designed to be savored with chopsticks, each dish embodies elegance and sophistication. Seafood and vegetables take center stage, celebrating the bounties of the ocean and the earth in perfect harmony, paired with our caviar.

Embark on a culinary journey guided by Chef Dillard, whose passion for Japanese cuisine ignited at a young age. Lance’s culinary odyssey commenced in 1979, when he was merely 8 years old, frequenting Samurai in Solana Beach with his family. Those evenings immersed in sushi and Japanese delicacies sowed the seeds of a lifelong devotion to the art of Japanese cooking.

Under the tutelage of esteemed mentors like Masayuki Murata, Lance honed his skills, eventually ascending to the role of Executive Chef at Hokusei in Portland, Oregon. His culinary prowess further flourished during his tenure with the prestigious Mina Group, where he worked closely with culinary luminaries such as Chef Michael Mina. Lance also contributed his expertise to the renowned Michelin-starred establishment, Madcap, under the guidance of Chef Ron Siegel.

With an illustrious career spanning over 34 years, Lance draws inspiration from the world around him, finding beauty in the rhythms of nature, the stroke of a brush on canvas, and the ever-changing seasons. Marin County, with its breathtaking coastline, fertile farmlands, and majestic mountains, serves as a constant muse, infusing his creations with a profound connection to the land and sea.
